Our Heritage Black Turkey is an old breed, one of the first to be developed from Native American stocks. We raise these special birds on a small family farm in North Carolina and process them by hand in our own plant, where they are also air chilled to preserve flavor, tenderness and perfect texture.
Our Poulet Rouge Fermier® chicken is a heritage breed from France known for its superior culinary qualities. Our Poulet Rouge® chicken is a true, slow growing heritage chicken with parchment-like skin and an unsurpassed flavor and texture. You would have to fly to Paris to taste a similar chicken. This bird is great on the rotisserie, roasted in the oven or braised like a Coq au vin.
These delicious heritage chicken "Coquelets" are the smallest of our Poulet Rouge Fermier® chicken products, weighing approximately 2.0 - 2.5 lbs each. We raise all of our Poulet Rouge™ chickens in the slow-growing, all-natural Label Rouge tradition for the best tasting chicken in the world. Not only does the Poulet Rouge™ chicken have a superior taste, it also has better meat texture and its thin skin finishes very crispy compared to most other chickens.
The Pintade Fermiere is a rustic, slow growing Heritage Guinea Hen from France. This bird is exceptionally flavorful with excellent meat texture. Our Pintade is great roasted whole or braised with a good stock and wine. You will be amazed at how flavorful this bird is.
